Quick Chicken Chalupas

Ingredients

  • 1 (4-ct) pkg flour chalupas
  • ½ lb boneless, skinless chicken thighs, cubed
  • 1 Tbsp less sodium taco seasoning mix
  • 1 Tbsp olive oil, divided
  • ½ cup shredded Mexican blend cheese
  • ¾ cup pico de gallo, well drained

Instructions

  1. Place chalupas on a baking sheet; brush with 1 tsp oil. Toast in oven according to package directions.
  2. Meanwhile, sprinkle chicken with seasoning mix. Cook chicken in 2 tsp hot oil in a skillet over medium-high heat 6 to 8 minutes or until chicken is done.
  3. Divide chicken among chalupa shells; top with cheese and pico.
