Quick Chicken Chalupas
Ingredients
- 1 (4-ct) pkg flour chalupas
- ½ lb boneless, skinless chicken thighs, cubed
- 1 Tbsp less sodium taco seasoning mix
- 1 Tbsp olive oil, divided
- ½ cup shredded Mexican blend cheese
- ¾ cup pico de gallo, well drained
Instructions
- Place chalupas on a baking sheet; brush with 1 tsp oil. Toast in oven according to package directions.
- Meanwhile, sprinkle chicken with seasoning mix. Cook chicken in 2 tsp hot oil in a skillet over medium-high heat 6 to 8 minutes or until chicken is done.
- Divide chicken among chalupa shells; top with cheese and pico.
