Vegetarian Chili

Ingredients

  • ½ onion, chopped
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ½ (15-oz) can black beans, undrained
  • 1 (15.5-oz) can Great Northern beans, undrained
  • 1 (14.5-oz) can diced tomatoes
  • 1 Tbsp chili powder
  • 1½ tsp ground cumin
  • ½ tsp pepper
  • ½ cup shredded Cheddar cheese
  • ½ cup sour cream

Instructions

  1. Cook onion in hot oil in a Dutch oven over medium-high heat 8 minutes or until lightly browned and tender. Add garlic; cook 1 minute or until tender.
  2. Add beans, tomatoes, chili powder, cumin, and pepper to pot; reduce heat to medium, and cook 25 minutes or until thickened, stirring occasionally. Top with cheese and sour cream.



Side Dish Ingredients

  • 1 (7-oz) pkg cornbread mix

Side Dish Instructions

  1. Bake cornbread according to package directions. Serve half, and reserve remaining half for another meal.
