Vegetarian Chili
Cornbread
Ingredients
- ½ onion, chopped
- 1 Tbsp olive oil
- 1 Tbsp minced garlic
- ½ (15-oz) can black beans, undrained
- 1 (15.5-oz) can Great Northern beans, undrained
- 1 (14.5-oz) can diced tomatoes
- 1 Tbsp chili powder
- 1½ tsp ground cumin
- ½ tsp pepper
- ½ cup shredded Cheddar cheese
- ½ cup sour cream
Instructions
- Cook onion in hot oil in a Dutch oven over medium-high heat 8 minutes or until lightly browned and tender. Add garlic; cook 1 minute or until tender.
- Add beans, tomatoes, chili powder, cumin, and pepper to pot; reduce heat to medium, and cook 25 minutes or until thickened, stirring occasionally. Top with cheese and sour cream.
Side Dish Ingredients
- 1 (7-oz) pkg cornbread mix
Side Dish Instructions
- Bake cornbread according to package directions. Serve half, and reserve remaining half for another meal.
