Creamy Tarragon Chicken

Ingredients
- 1 (10.5-oz) can cream of chicken soup
- 1 (8-oz) carton sour cream
- 1 cup chicken broth
- 2 tsp Dijon mustard
- ¾ tsp dried tarragon
- 6 (6-oz) boneless, skinless chicken breasts
- 2 Tbsp olive oil
Instructions
- Whisk together soup, sour cream, broth, mustard, and tarragon; set aside.
- Pound chicken to ½-inch thickness between plastic wrap with a meat mallet.
- Cook chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until lightly browned.
- Spoon soup mixture over chicken; cover, and simmer 10 minutes or until chicken is done.

- 2 (8.8-oz) pouch microwavable long grain white rice
- 1½ cups frozen green peas
Side Dish Instructions
- Toss together rice and peas in a large bowl; season with salt and pepper, if desired.
- Microwave rice and peas according to package directions.
