Ingredients

  • 1 (10.5-oz) can cream of chicken soup
  • 1 (8-oz) carton sour cream
  • 1 cup chicken broth
  • 2 tsp Dijon mustard
  • ¾ tsp dried tarragon
  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 Tbsp olive oil

Instructions

  1. Whisk together soup, sour cream, broth, mustard, and tarragon; set aside.
  2. Pound chicken to ½-inch thickness between plastic wrap with a meat mallet.
  3. Cook chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until lightly browned.
  4. Spoon soup mixture over chicken; cover, and simmer 10 minutes or until chicken is done.

  • 2 (8.8-oz) pouch microwavable long grain white rice
  • 1½ cups frozen green peas

Side Dish Instructions

  1. Toss together rice and peas in a large bowl; season with salt and pepper, if desired.
  2. Microwave rice and peas according to package directions.
