Peanut-Vegetable Noodles

Ingredients

  • 1 (14-oz) pkg rice noodles
  • 1 (12-oz) pkg frozen shelled edamame
  • 1 (16-oz) pkg tricolor coleslaw
  • 1 large bell pepper, thinly sliced
  • 2 Tbsp vegetable oil
  • 1 (11.5-oz) bottle vegan peanut sauce
  • 1 cup roasted, lightly salted peanuts
  • ½ cup chopped fresh cilantro
  • ¼ cup lime juice

Instructions

  1. Cook noodles according to package directions.
  2. Meanwhile, cook edamame, coleslaw, and bell pepper in hot oil in a large skillet over medium-high heat 8 minutes or until lightly browned and tender. Stir in peanut sauce and peanuts; cook 3 minutes or until thoroughly heated.
  3. Stir in noodles. Toss with cilantro and lime juice.
