Sausage and Potato Frittata

English Muffins with Strawberry Butter and Sliced Melon

Ingredients

  • ½ lb ground pork sausage
  • 1½ cups frozen diced hash browns, thawed
  • 6 large eggs
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp pepper
  • ½ cup shredded Italian blend cheese

Instructions

  1. Preheat oven to 350°F. Cook sausage in an ovenproof skillet over medium heat until browned and crumbly. Stir in hash browns.
  2. Whisk together eggs, salt, garlic powder, and pepper in a bowl. Add to skillet, and cook, stirring, 2 minutes. Sprinkle with cheese. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.



Side Dish Ingredients

  • 1 Tbsp strawberry preserves
  • ½ honeydew melon, sliced 
  • 2 Tbsp butter, softened
  • 2 English muffins, split

Side Dish Instructions

  1. Preheat broiler. Place muffins, cut sides up on a baking sheet; broil until toasted.
  2. Meanwhile, stir together butter and preserves. Serve with toasted muffins.
  3. Serve sliced melon on each plate.
