Sausage and Potato Frittata
English Muffins with Strawberry Butter and Sliced MelonIngredients
- ½ lb ground pork sausage
- 1½ cups frozen diced hash browns, thawed
- 6 large eggs
- ½ tsp salt
- ½ tsp garlic powder
- ¼ tsp pepper
- ½ cup shredded Italian blend cheese
Instructions
- Preheat oven to 350°F. Cook sausage in an ovenproof skillet over medium heat until browned and crumbly. Stir in hash browns.
- Whisk together eggs, salt, garlic powder, and pepper in a bowl. Add to skillet, and cook, stirring, 2 minutes. Sprinkle with cheese. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.
Side Dish Ingredients
- 1 Tbsp strawberry preserves
- ½ honeydew melon, sliced
- 2 Tbsp butter, softened
- 2 English muffins, split
Side Dish Instructions
- Preheat broiler. Place muffins, cut sides up on a baking sheet; broil until toasted.
- Meanwhile, stir together butter and preserves. Serve with toasted muffins.
- Serve sliced melon on each plate.
