One-Pot Cheeseburger Gnocchi

Ingredients

  • 3 Tbsp butter
  • 1 (16-oz) pkg gnocchi
  • 1 lb ground beef
  • ½ cup chopped onion
  • 1 (14.5-oz) can diced tomatoes, drained
  • 1 (10.5-oz) can cream of celery soup
  • ¾ cup less sodium chicken broth
  • 1 Tbsp Worcestershire sauce
  • 1 (8-oz) block Cheddar cheese, shredded

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, spreading in a single layer. Cook 8 minutes or until toasted. Remove from skillet.
  2. Cook beef and onion in same skillet over medium heat 8 minutes or until beef is browned and crumbly; drain and return to skillet.
  3. Stir in tomatoes, soup, broth, Worcestershire, and gnocchi. Bring to a boil; reduce heat, cover and simmer 5 minutes or until thoroughly heated. Stir in cheese.



Side Dish Ingredients

  • ½ tsp pepper
  • 1 head iceberg lettuce
  • 3 Roma tomatoes, chopped
  • ¾ cup Ranch dressing
  • ½ cup chopped red onion

Side Dish Instructions

  1. Cut lettuce into 6 wedges, and divide among 6 plates. Drizzle with dressing; sprinkle with tomatoes, onion, and pepper.
