Pre-heat oven to 400 degrees F. Place cauliflower, onions, carrots, and green onions in a large bowl. Mix well.
In a small bowl, whisk together olive oil, coconut aminos, ginger, garlic powder, and salt. Pour all but ¼ cup of this mixture over the vegetables, and mix in. Spread vegetables evenly over a parchment- or silicone-lined roasting tray.
Combine remaining ¼ cup liquid with shrimp, and turn to coat. Spread shrimp evenly on top of the vegetables. Place tray in oven, and bake for 15 minutes. When done, give it a stir, and serve. Garnish with green onion.
