Steak and Vegetable Couscous

Ingredients
- 1½ lb skirt steak, trimmed
- ½ tsp salt
- ½ tsp pepper
- 1½ cups Israeli couscous
- ¾ cup kalamata or green olives
- ¾ cup roasted red bell peppers in oil, drained and sliced
- ¾ cup crumbled feta cheese
- ½ cup olive oil vinaigrette
- ½ cup chopped fresh parsley
Instructions
- Preheat broiler. Place steak on a rimmed baking sheet; sprinkle steak with salt and pepper. Broil 5 minutes per side or until desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Meanwhile, cook couscous according to package directions. Stir in olives, peppers, cheese, vinaigrette, and parsley. Serve steak with couscous.
