Shredded Pork Tostadas
Ingredients
- 6 burrito size flour tortillas
- 3 Tbsp olive oil
- 1 (15-oz) container refrigerated carnitas fully cooked pork
- 1 (8-oz) pkg shredded Colby Jack cheese
- 1 (8-oz) pkg shredded lettuce
- ½ red onion, thinly sliced
- ½ cup sour cream
- 1 cup refrigerated pico de gallo
Instructions
- Preheat oven to 425°F. Brush tortillas with oil; place on a large baking sheet. Bake 8 minutes or until crispy.
- Meanwhile, heat pork according to package directions. Divide pork and cheese among tortillas. Bake 5 minutes longer or until cheese is melted.
- Top tortillas with lettuce, onion, sour cream, and pico de gallo.
