Shredded Pork Tostadas

Ingredients

  • 6 burrito size flour tortillas
  • 3 Tbsp olive oil
  • 1 (15-oz) container refrigerated carnitas fully cooked pork
  • 1 (8-oz) pkg shredded Colby Jack cheese
  • 1 (8-oz) pkg shredded lettuce
  • ½ red onion, thinly sliced
  • ½ cup sour cream
  • 1 cup refrigerated pico de gallo

Instructions

  1. Preheat oven to 425°F. Brush tortillas with oil; place on a large baking sheet. Bake 8 minutes or until crispy.
  2. Meanwhile, heat pork according to package directions. Divide pork and cheese among tortillas. Bake 5 minutes longer or until cheese is melted.
  3. Top tortillas with lettuce, onion, sour cream, and pico de gallo.
