Tuscan Pork Chops

Parsley Mashed Potatoes and Steamed Broccoli

Ingredients

  • 2 lb boneless pork chops
  • 2 Tbsp olive oil
  • 1 onion, thinly sliced
  • 4 tomatoes, chopped
  • 1 Tbsp minced garlic
  • ½ cup white wine
  • 1 (0.5-oz) pkg fresh basil, sliced

Instructions

  1. Season pork with salt and pepper, if desired.
  2. Cook pork in hot oil in a large skillet over medium heat 4 minutes per side or until browned. Remove from skillet and keep warm.
  3. Add onion to skillet; cook 3 minutes or until just tender. Stir in tomatoes, garlic, and wine; cook, stirring frequently, 5 to 6 minutes or until sauce is thickened.
  4. Return pork to pan; cook 1 minute. Sprinkle with basil.



Side Dish Ingredients

  • 3 Tbsp chopped fresh parsley
  • 2 (24-oz) pkg refrigerated mashed potatoes
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Heat mashed potatoes according to package directions; stir in parsley.
  2. Steam broccoli according to package directions; season with salt and pepper, if desired.
