Tuscan Pork Chops
Parsley Mashed Potatoes and Steamed BroccoliIngredients
- 2 lb boneless pork chops
- 2 Tbsp olive oil
- 1 onion, thinly sliced
- 4 tomatoes, chopped
- 1 Tbsp minced garlic
- ½ cup white wine
- 1 (0.5-oz) pkg fresh basil, sliced
Instructions
- Season pork with salt and pepper, if desired.
- Cook pork in hot oil in a large skillet over medium heat 4 minutes per side or until browned. Remove from skillet and keep warm.
- Add onion to skillet; cook 3 minutes or until just tender. Stir in tomatoes, garlic, and wine; cook, stirring frequently, 5 to 6 minutes or until sauce is thickened.
- Return pork to pan; cook 1 minute. Sprinkle with basil.

- 2 (24-oz) pkg refrigerated mashed potatoes
- 2 (12-oz) pkg broccoli florets

- Heat mashed potatoes according to package directions; stir in parsley.
- Steam broccoli according to package directions; season with salt and pepper, if desired.
