Italian Beef Pasta

Ingredients

  • 12 oz rigatoni (or use penne pasta)
  • 1 lb ground beef
  • 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano
  • ¾ cup heavy cream
  • 4 cups spinach
  • ¾ cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook beef in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Drain beef, set aside, and keep warm. Wipe skillet clean.
  3. Add tomatoes and cream to skillet; cook 4 to 5 minutes or until thickened. Stir in beef and spinach; cook until spinach wilts.
  4. Serve beef mixture over pasta. Sprinkle with cheese.
