Honey-Garlic Pork

Ingredients

  • 2 lb boneless pork chops, cubed
  • 1 Tbsp cornstarch
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ⅓ cup honey
  • ¼ cup less sodium chicken broth
  • 2 Tbsp lemon juice
  • 6 cloves garlic, minced
  • 3 green onions, thinly sliced
  • 1 tsp crushed red pepper flakes, optional

Instructions

  1. Toss together pork, cornstarch, salt, and pepper until coated. Cook pork, in 2 batches, in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and done.
  2. Meanwhile, stir together honey, broth, lemon juice, and garlic.
  3. Reduce heat to medium, and return all pork to skillet. Add honey mixture to skillet; cook 2 to 3 minutes or until slightly thickened, stirring to coat. Sprinkle with green onions and, if desired, red pepper.



Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 3 (3.5-oz) pouches boil in bag brown rice
  • 3 green onions, thinly sliced
  • ¾ tsp salt, divided
  • 2 Tbsp sesame oil

Side Dish Instructions

  1. Cook rice according to package directions. Transfer hot cooked rice to a bowl; stir in oil, ¼ tsp salt, and onions.
  2. Cook broccoli according to package directions. Sprinkle with ½ tsp salt.
