Apple Butter Pork Chops

Mashed Sweet Potatoes and Crunchy Lemon Broccoli

Ingredients

  • ¾ lb boneless center cut pork loin chops
  • ¼ tsp dried thyme
  • ¼ tsp salt
  • 2 Tbsp olive oil, divided
  • 1 apple, sliced
  • ⅓ cup apple butter
  • ⅓ cup heavy cream

Instructions

  1. Sprinkle pork with thyme and salt. Cook pork in 1 Tbsp hot oil in a skillet over medium-high heat 4 to 5 minutes per side or until a thermometer inserted registers 145°F. Remove pork from skillet; keep warm.
  2. Cook apple in 1 Tbsp hot oil in same skillet over medium-high heat 5 to 7 minutes or until tender. Add apple butter and cream to skillet. Cook 5 minutes or until sauce thickens.
  3. Return pork chops to skillet; cook 2 minutes or until thoroughly heated.



Side Dish Ingredients

  • 1 (12-oz) pkg broccoli florets
  • ¼ cup panko breadcrumbs
  • 1½ Tbsp olive oil
  • ½ tsp lemon pepper seasoning
  • 1 (22-oz) pkg refrigerated mashed sweet potatoes

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together broccoli, breadcrumbs, oil, and lemon-pepper seasoning on a lightly greased rimmed baking sheet. Bake 15 minutes or until browned and tender.
  2. Heat potatoes according to package directions.
