Apple Butter Pork Chops
Mashed Sweet Potatoes and Crunchy Lemon Broccoli
Ingredients
- ¾ lb boneless center cut pork loin chops
- ¼ tsp dried thyme
- ¼ tsp salt
- 2 Tbsp olive oil, divided
- 1 apple, sliced
- ⅓ cup apple butter
- ⅓ cup heavy cream
Instructions
- Sprinkle pork with thyme and salt. Cook pork in 1 Tbsp hot oil in a skillet over medium-high heat 4 to 5 minutes per side or until a thermometer inserted registers 145°F. Remove pork from skillet; keep warm.
- Cook apple in 1 Tbsp hot oil in same skillet over medium-high heat 5 to 7 minutes or until tender. Add apple butter and cream to skillet. Cook 5 minutes or until sauce thickens.
- Return pork chops to skillet; cook 2 minutes or until thoroughly heated.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- ¼ cup panko breadcrumbs
- 1½ Tbsp olive oil
- ½ tsp lemon pepper seasoning
- 1 (22-oz) pkg refrigerated mashed sweet potatoes
Side Dish Instructions
- Preheat oven to 425°F. Toss together broccoli, breadcrumbs, oil, and lemon-pepper seasoning on a lightly greased rimmed baking sheet. Bake 15 minutes or until browned and tender.
- Heat potatoes according to package directions.
