Turkey-Pesto Panini

Ingredients

  • 1 (12-oz) pkg bacon
  • 1 jar rustic basil pesto
  • ½ cup mayonnaise
  • 2 (14-oz) loaves ciabatta bread, halved
  • 1 lb deli sliced less sodium turkey
  • 12 slices havarti cheese

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Stir together pesto and mayonnaise in a bowl. Spread mixture over cut sides of bread.
  3. Layer bacon, cheese, and turkey over pesto mixture on bread bottoms. Cover with bread tops, spread side down. Coat outsides of sandwiches with cooking spray.
  4. Cook sandwiches, in a large skillet (or a panini press) over medium heat, pressing sandwich down using a heavy skillet, 3 to 4 minutes per side or until toasted.
