Herbed Foccacia
Ingredients
- 2 cups warm water, 110°F
- 1 (0.25-oz) pkg instant yeast
- 2 tsp granulated sugar
- 4 cups all purpose flour
- 1 Tbsp kosher salt
- 4 Tbsp olive oil, divided
- 1 Tbsp chopped fresh rosemary
- 1 Tbsp chopped fresh parsley
- 2 tsp chopped fresh thyme
Instructions
- Combine warm water, yeast, and sugar in a medium bowl; let stand 5 minutes or until mixture is foamy.
- Stir together flour and salt in a large bowl. Add yeast mixture, stirring until blended (dough will be sticky). Cover, and refrigerate at least 12 hours or up to 16 hours.
- Brush 2 Tbsp oil in bottom and up sides of 2 (9-inch) round cake pans.
- Divide dough among pans. Lightly cover, and let rise in a warm (85°F), draft-free place, 2 hours or until dough has doubled in size.
- Preheat oven to 425°F. Using the end of a wooden spoon or your fingers, press indentions over tops of dough. Brush with remaining 2 Tbsp oil and sprinkle with herbs. Bake 15 to 20 minutes or until golden brown. Cut into wedges to serve.
