Mini Chocolate-Bourbon-Pecan Tarts

Ingredients

  • ½ cup butter, melted
  • ½ cup firmly packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 Tbsp Woodford Reserve Bourbon®
  • ½ cup all purpose flour
  • 1 cup coarsely chopped pecans
  • 1 cup semisweet mini chocolate chips
  • 1 (15-oz) box refrigerated pie crusts
  • ½ (8-oz) container frozen whipped topping, thawed
  • ½ (4-oz) semisweet chocolate bar, shaved

Instructions

  1. Preheat oven to 350°F. Stir together melted butter, sugars, eggs, bourbon, and flour in a large bowl until blended. Add nuts and chocolate chips, stirring until blended.
  2. Meanwhile, unroll pie crusts on a lightly floured surface; roll each into a 14-inch circle. Cut 24 rounds from crusts using a 3-inch round cutter.
  3. Press dough rounds into bottoms and up sides of 24 lightly greased miniature muffin cups. Spoon chocolate-nut mixture into prepared crusts. Bake 20 to 25 minutes or until centers are set.
  4. Let cool 15 minutes before removing from pans. Cool completely.
  5. Spoon whipped topping over tarts; sprinkle with chocolate shavings.
