Cornbread Stuffing Bites

Ingredients
- 1 lb ground pork sausage
- 1 onion, chopped
- ½ cup copped celery
- 2 cups chicken broth
- 3 large eggs, lightly beaten
- 1 (12-oz) pkg cornbread stuffing mix
- 1 cup freshly shredded white Cheddar cheese
- ¼ cup sweetened dried cranberries, coarsely chopped
- 1 Tbsp fresh thyme leaves
- 1 Tbsp chopped fresh rosemary
- ½ tsp poultry seasoning
- ½ tsp pepper
Instructions
- Preheat oven to 350°F. Cook sausage in a large skillet over medium-high heat 6 to 7 minutes or until brown and crumbly. Add onion and celery; cook 5 to 6 minutes or until browned and tender; let cool.
- Whisk together broth and eggs.
- Combine sausage mixture, stuffing mix, broth mixture, cheese, cranberries, thyme, rosemary, poultry seasoning, and pepper in a large bowl; stir until well blended.
- Spoon stuffing mixture into 2 lightly greased 24-cup miniature muffins pans. Bake 20 minutes or until set and golden brown. Let cool. Run knife around edges of each muffin cup to remove stuffing bites.
