Ingredients

  • 1 lb ground pork sausage
  • 1 onion, chopped
  • ½ cup copped celery
  • 2 cups chicken broth
  • 3 large eggs, lightly beaten
  • 1 (12-oz) pkg cornbread stuffing mix
  • 1 cup freshly shredded white Cheddar cheese
  • ¼ cup sweetened dried cranberries, coarsely chopped
  • 1 Tbsp fresh thyme leaves
  • 1 Tbsp chopped fresh rosemary
  • ½ tsp poultry seasoning
  • ½ tsp pepper

Instructions

  1. Preheat oven to 350°F. Cook sausage in a large skillet over medium-high heat 6 to 7 minutes or until brown and crumbly. Add onion and celery; cook 5 to 6 minutes or until browned and tender; let cool.
  2. Whisk together broth and eggs.
  3. Combine sausage mixture, stuffing mix, broth mixture, cheese, cranberries, thyme, rosemary, poultry seasoning, and pepper in a large bowl; stir until well blended.
  4. Spoon stuffing mixture into 2 lightly greased 24-cup miniature muffins pans. Bake 20 minutes or until set and golden brown. Let cool. Run knife around edges of each muffin cup to remove stuffing bites.
