Apple Scones with Caramel Butter

Ingredients

  • 2¼ cups all purpose flour
  • ⅓ cup packed brown sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 5 Tbsp cold butter, cubed
  • 4 oz cream cheese, cubed
  • 1 cup finely chopped peeled Pink Lady apple
  • ⅔ cup heavy cream
  • 1 large egg
  • 2 Tbsp turbinado sugar
  • 1 cup caramel topping, warmed
  • ¼ cup powdered sugar

Instructions

  1. Preheat oven to 400°F. Whisk together flour, brown sugar, baking powder, and salt in a large bowl.
  2. Cut in butter and cream cheese using a pastry blender until mixture is crumbly. Stir in chopped apple.
  3. Whisk together cream and egg; add to flour mixture, stirring just until dry ingredients are moistened.
  4. Turn out dough onto a lightly floured surface; pat into an 8-inch circle. Cut dough into 8 wedges. Place scones on a parchment paper-lined baking sheet. Sprinkle with turbinado sugar.
  5. Bake 18 to 20 minutes or until golden brown. Cool on baking sheet 15 minutes; remove to a wire rack.
  6. Whisk together caramel sauce and powdered sugar until smooth. Drizzle over warm scones.
