Almond-Crusted Grouper

Ingredients
- 8 (6-oz) grouper fillets
- 1½ cups finely chopped sliced almonds
- ¾ cup panko breadcrumbs
- 2 Tbsp olive oil
- 2 large eggs
- ⅓ cup butter
- 2 Tbsp balsamic vinegar
- 1 Tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F. Season fish with salt and pepper, if desired.
- Combine nuts, breadcrumbs, and oil in a shallow dish. Beat eggs lightly in a separate shallow dish. Dip fish in eggs; dredge in nut mixture, pressing gently to adhere.
- Place fish on a lightly greased wire rack over a large baking sheet. Bake 15 minutes or until fish flakes with a fork.
- Meanwhile, melt butter in a skillet over medium heat. Cook 5 minutes or until butter is browned. Whisk in vinegar and parsley; spoon over fish.
