Ingredients

  • 8 (6-oz) grouper fillets
  • 1½ cups finely chopped sliced almonds
  • ¾ cup panko breadcrumbs
  • 2 Tbsp olive oil
  • 2 large eggs
  • ⅓ cup butter
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F. Season fish with salt and pepper, if desired.
  2. Combine nuts, breadcrumbs, and oil in a shallow dish. Beat eggs lightly in a separate shallow dish. Dip fish in eggs; dredge in nut mixture, pressing gently to adhere.
  3. Place fish on a lightly greased wire rack over a large baking sheet. Bake 15 minutes or until fish flakes with a fork.
  4. Meanwhile, melt butter in a skillet over medium heat. Cook 5 minutes or until butter is browned. Whisk in vinegar and parsley; spoon over fish.
