Baked Cheese Grits

Ingredients

  • 8 cups chicken broth
  • 2 cups stone ground grits
  • 3 oz cream cheese, softened
  • ⅓ cup butter
  • 2 cups shredded Gouda cheese
  • 1 cup shredded Parmesan cheese
  • 2 Tbsp chopped fresh thyme
  • 1 tsp pepper
  • 1 cup heavy cream
  • 4 large eggs, lightly beaten

Instructions

  1. Preheat oven to 350ºF. Bring broth to a boil in a large saucepan over medium-high heat. Slowly add grits, whisking constantly. Reduce heat to medium, and cook, stirring often, about 45 minutes or until grits are very thick. Add cream cheese, butter, shredded cheeses, thyme, and pepper, stirring until blended. Remove from heat, and let cool slightly.
  2. Whisk together cream and eggs in a bowl. Add egg mixture to grits, whisking to combine. Pour into a lightly greased 2½-quart baking dish. Bake 1 hour or until center is set. Garnish with fresh herbs, if desired.
