Chicken Salad in Phyllo Cups

Ingredients

  • 3 cups chopped rotisserie chicken
  • ¾ cup diced celery
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 Tbsp lemon zest
  • ½ cup finely chopped roasted and salted almonds
  • 1 small Honeycrisp apple, diced
  • 2 green onions, finely chopped
  • 2 Tbsp honey
  • 3 (1.9-oz) pkg frozen mini phyllo dough shells

Instructions

  1. Stir together all ingredients except phyllo shells in a large bowl. Season with salt and pepper, if desired. Cover, and refrigerate up to 3 days.
  2. Spoon chicken salad into phyllo cups; serve immediately.
