Crunchy Buñuelos

Ingredients
- 3 cups all purpose flour
- 1 tsp baking powder
- 1 tsp kosher salt
- 1 cup plus 1 Tbsp granulated sugar, divided
- ½ cup vegetable shortening
- 1 cup cold water
- 1 (32-oz) bottle vegetable oil
- 2 tsp ground cinnamon
Instructions
- Process flour, baking powder, salt, and 1 Tbsp sugar in a food processor until blended. Add shortening, and pulse until crumbly.
- With processor running, gradually add cold water, processing until combined, adding additional water if needed. Process dough just until it comes together; cover and let stand 30 minutes.
- Shape dough into 24 (1½-inch) balls; cover dough balls until ready to use. On a lightly floured surface, sprinkle 1 dough ball with flour, and roll out to ⅛-inch thickness. Repeat procedure with remaining dough balls.
- Meanwhile, pour oil 4 inches deep in a large Dutch oven; heat over medium-high heat until a deep-fry thermometer registers 360°F.
- Fry dough rounds, in batches, 3 to 4 minutes per side or until crispy and golden brown. Drain on a wire rack set over paper towels.
- Stir together 1 cup sugar and 2 tsp cinnamon in a bowl. Sprinkle hot Buñuelos with sugar mixture to coat.
