Crunchy Buñuelos

Ingredients

  • 3 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 cup plus 1 Tbsp granulated sugar, divided
  • ½ cup vegetable shortening
  • 1 cup cold water
  • 1 (32-oz) bottle vegetable oil
  • 2 tsp ground cinnamon

Instructions

  1. Process flour, baking powder, salt, and 1 Tbsp sugar in a food processor until blended. Add shortening, and pulse until crumbly.
  2. With processor running, gradually add cold water, processing until combined, adding additional water if needed. Process dough just until it comes together; cover and let stand 30 minutes.
  3. Shape dough into 24 (1½-inch) balls; cover dough balls until ready to use. On a lightly floured surface, sprinkle 1 dough ball with flour, and roll out to ⅛-inch thickness. Repeat procedure with remaining dough balls.
  4. Meanwhile, pour oil 4 inches deep in a large Dutch oven; heat over medium-high heat until a deep-fry thermometer registers 360°F.
  5. Fry dough rounds, in batches, 3 to 4 minutes per side or until crispy and golden brown. Drain on a wire rack set over paper towels.
  6. Stir together 1 cup sugar and 2 tsp cinnamon in a bowl. Sprinkle hot Buñuelos with sugar mixture to coat.
