Chicken-Bacon-Spinach Pasta Pizza

Ingredients

  • 8 oz spaghetti
  • 1 large egg
  • 1 cup shredded mozzarella cheese, divided
  • 5 slices bacon, chopped
  • ½ lb boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • ½ (10-oz) pkg spinach
  • ½ (15-oz) jar Alfredo sauce

Instructions

  1. Preheat oven to 400°F. Cook spaghetti according to package directions; drain well.
  2. Beat egg lightly in a medium bowl; stir in spaghetti and ½ cup cheese. Press mixture in an even layer on a greased pizza pan. Bake 20 minutes.
  3. Meanwhile, cook bacon in a skillet over medium heat until crisp; drain, reserving 1 Tbsp drippings in skillet.
  4. Pound chicken to an even thickness between plastic wrap using a meat mallet. Cook chicken and mushrooms in hot drippings in skillet over medium heat 5 to 6 minutes or until chicken is done. Gradually add spinach, stirring until wilted.
  5. Spread Alfredo sauce over baked spaghetti; top with chicken mixture, bacon, and ½ cup cheese.
  6. Bake 15 to 20 minutes or until cheese is melted and bubbly.
