Chicken-Tomato Salad
Ingredients
- 6 cups shredded rotisserie chicken
- 6 ripe tomatoes, cut into thin wedges
- 4½ cups spring mix
- 6 Tbsp olive oil
- 3½ Tbsp apple cider vinegar
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- 1½ avocados, diced
- ¾ cup crumbled feta cheese
- 6 Tbsp chopped fresh basil
Instructions
- Combine chicken, tomatoes, and lettuce in a large bowl.
- Whisk together oil, vinegar, salt, pepper, and garlic powder. Pour mixture over salad; toss.
- Add avocado, cheese, and basil; toss.
