Chicken-Tomato Salad

Ingredients

  • 6 cups shredded rotisserie chicken
  • 6 ripe tomatoes, cut into thin wedges
  • 4½ cups spring mix
  • 6 Tbsp olive oil
  • 3½ Tbsp apple cider vinegar
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 1½ avocados, diced
  • ¾ cup crumbled feta cheese
  • 6 Tbsp chopped fresh basil

Instructions

  1. Combine chicken, tomatoes, and lettuce in a large bowl.
  2. Whisk together oil, vinegar, salt, pepper, and garlic powder. Pour mixture over salad; toss.
  3. Add avocado, cheese, and basil; toss.
