Jerk Chicken with Mango Salsa

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1½ Tbsp Jerk seasoning
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 mangos, chopped
  • 1 red bell pepper, minced
  • 1 jalapeno pepper, seeded and minced
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush chicken with oil, and sprinkle with seasoning and ½ each salt and pepper.
  2. Grill chicken, covered, 5 to 6 minutes per side or until done.
  3. Toss together mangoes, bell pepper, jalapeno, cilantro, lime juice, and ¼ tsp each salt and pepper. Serve salsa with chicken.

  • 2 (8.5-oz) pouches microwavable coconut jasmine rice

Side Dish Instructions

  1. Cook rice according to package directions.
