Jerk Chicken with Mango Salsa
Coconut Rice
Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1½ Tbsp Jerk seasoning
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 mangos, chopped
- 1 red bell pepper, minced
- 1 jalapeno pepper, seeded and minced
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp lime juice
Instructions
- Preheat grill or grill pan to medium-high heat. Brush chicken with oil, and sprinkle with seasoning and ½ each salt and pepper.
- Grill chicken, covered, 5 to 6 minutes per side or until done.
- Toss together mangoes, bell pepper, jalapeno, cilantro, lime juice, and ¼ tsp each salt and pepper. Serve salsa with chicken.

- 2 (8.5-oz) pouches microwavable coconut jasmine rice
Side Dish Instructions
- Cook rice according to package directions.
