Italian Tortellini Salad

Ingredients

  • 1 (18-oz) pkg refrigerated cheese tortellini
  • 1 (8.5-oz) jar julienned sun dried tomatoes in oil
  • 2 Tbsp balsamic vinegar
  • 1 (5-oz) pkg sliced salami, chopped
  • 1 (3-oz) pkg thinly sliced prosciutto, torn into large pieces
  • 1 (10-oz) pkg baby spinach
  • 1 (0.5-oz) pkg fresh basil, thinly sliced
  • ½ cup shaved Parmesan cheese

Instructions

  1. Cook tortellini according to package directions; drain and rinse with cold water. Drain again.
  2. Meanwhile, drain sun-dried tomatoes, reserving 2 Tbsp oil from jar in a large bowl.
  3. Add vinegar, whisking to combine.
  4. Add cooked tortellini, salami, prosciutto, spinach, basil, and Parmesan; toss.
  5. Season with salt and pepper, if desired.
