Italian Tortellini Salad
Ingredients
- 1 (18-oz) pkg refrigerated cheese tortellini
- 1 (8.5-oz) jar julienned sun dried tomatoes in oil
- 2 Tbsp balsamic vinegar
- 1 (5-oz) pkg sliced salami, chopped
- 1 (3-oz) pkg thinly sliced prosciutto, torn into large pieces
- 1 (10-oz) pkg baby spinach
- 1 (0.5-oz) pkg fresh basil, thinly sliced
- ½ cup shaved Parmesan cheese
Instructions
- Cook tortellini according to package directions; drain and rinse with cold water. Drain again.
- Meanwhile, drain sun-dried tomatoes, reserving 2 Tbsp oil from jar in a large bowl.
- Add vinegar, whisking to combine.
- Add cooked tortellini, salami, prosciutto, spinach, basil, and Parmesan; toss.
- Season with salt and pepper, if desired.
