Thai Chicken Burgers
Roasted Potatoes
Ingredients
- 1 small shallot, finely chopped
- 3 Tbsp chopped fresh cilantro, divided
- 1½ Tbsp less sodium soy sauce
- 2 tsp minced ginger
- ½ lb ground chicken
- ⅓ cup panko breadcrumbs
- 1 cup broccoli slaw
- 2 hamburger buns
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together shallot, 2 Tbsp cilantro, soy sauce, and ginger in a medium bowl. Transfer half of mixture to a second bowl.
- Add chicken and breadcrumbs to shallot mixture in one bowl; gently mix together using your hands. Shape mixture into 2 patties.
- Add slaw and 2 Tbsp cilantro to shallot mixture in remaining bowl; toss.
- Grill patties, uncovered, 5 to 6 minutes per side or until centers are no long pink. Grill buns 2 minutes or until toasted. Serve patties on buns with slaw.
Side Dish Ingredients
- ⅛ tsp salt
- 1 Tbsp olive oil
- ½ lb small red potatoes, halved
- 1 small shallot, sliced
- ⅛ tsp pepper
- ½ tsp garlic powder
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
- Roast 15 to 18 minutes or until potatoes are tender and lightly browned, stirring halfway through baking.
