Cheddar Cheese Mashed Potatoes and Green Beans

Ingredients

  • 1 (3-lb) boneless chuck roast, trimmed
  • 1 (16-oz) pkg baby carrots
  • 1 onion, cut into wedges
  • 4 stalks celery, cut into 1-inch pieces
  • 1 (0.7-oz) envelope Italian dressing and seasoning mix
  • 1 (0.87-oz) envelope brown gravy mix
  • 1 (1-oz) envelope ranch seasoning mix
  • 1 cup chicken broth

Instructions

  1. Place roast, carrots, onion, and celery in a 5- to 7-quart slow cooker. Sprinkle seasoning and gravy mixes over roast and vegetables. Pour broth over roast.
  2. Cover, and cook 8 to 10 hours or until roast is very tender. Slice or shred roast and serve with vegetables and gravy.



Side Dish Ingredients

  • 2 (8-oz) pkg thin green beans
  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 1 cup shredded Cheddar cheese

Side Dish Instructions

  1. Heat potatoes according to package directions; stir in cheese until blended.
  2. Steam green beans according to package directions.
