Instructions
Preheat oven to 450°F. Toss potatoes and onion with salt, pepper, and 1 Tbsp oil on a lightly greased rimmed baking sheet.
Bake 10 minutes or until potatoes are just tender; nestle sausage around potatoes and onion.
Bake 10 minutes longer or until sausages begin to brown.
Meanwhile, whisk together 2 Tbsp oil, mustard, honey, and vinegar; massage 2 Tbsp vinaigrette into kale.
Remove baking sheet from oven; add kale, and bake 3 minutes longer or until kale becomes charred in places. Drizzle remaining vinaigrette over potatoes and sausage.
