Summer Vegetable Gnocchi
Ingredients
- 2 (16-oz) pkg gnocchi
- 6 Tbsp olive oil, divided
- 1 yellow squash, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 pint grape tomatoes
- 1 (24-oz) jar marinara sauce
- 1 cup grated Parmesan cheese
Instructions
- Preheat oven to 450°F. Toss together gnocchi and 3 Tbsp oil on a large rimmed baking sheet; spread in a single layer. Toss together vegetables, tomatoes, and 3 Tbsp oil on another large rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until gnocchi are toasted and vegetables are browned and tender, stirring gnocchi and vegetables and swapping pans halfway through baking.
- Meanwhile, heat marinara sauce according to package directions.
- Divide gnocchi among 6 bowls. Top with vegetables, sauce, and cheese.
