Pork Fried Rice

Ingredients
- 1 (3.5-oz) pouch boil in bag brown rice
- ½ lb ground pork
- ½ cup chopped onion
- 1 Tbsp vegetable oil
- 1 cup frozen peas and carrots, thawed
- 1 large egg, lightly beaten
- 2 Tbsp less sodium soy sauce
Instructions
- Cook rice according to package directions.
- Meanwhile, cook pork and onion in hot oil in a skillet over medium-high heat 6 minutes. Add peas and carrots; cook 5 minutes or until tender. Add rice; cook 2 minutes.
- Push rice mixture to the side. Add egg to center of skillet; cook, stirring constantly, until scrambled. Combine egg with rice mixture; stir in soy sauce.
