Sausage, White Bean, and Kale Stew

Ingredients

  • 1 lb hot Italian turkey sausage links, casings removed
  • 2 Tbsp olive oil
  • 1 (8-oz) pkg chopped onion, bell pepper, and celery mix
  • 2 (15-oz) cans cannellini beans, drained and rinsed
  • 1 (16-oz) pkg chopped kale
  • 2 (32-oz) cartons low-sodium chicken broth

Instructions

  1. Cook sausage in hot oil in a large Dutch oven over medium-high heat 5 minutes or until browned. Remove from Dutch oven, and keep warm.
  2. Add onion mix to Dutch oven; cook 3 minutes or until tender.
  3. Return sausage to Dutch oven; add beans, kale, and broth. Bring to a boil; reduce heat, and simmer 10 minutes.



Side Dish Ingredients

  • ½ tsp pepper
  • 1 (11-oz) can refrigerated breadstick dough
  • 3 Tbsp freshly shredded Parmesan cheese
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Bake according to package directions.
  2. Preheat oven to 375°F. Unroll dough; brush with oil. Sprinkle with cheese and pepper; twist each dough portion, and arrange on a lightly greased baking sheet.
