Pork Chop Bites

Parmesan-Pepper Mashed Potatoes and Roasted Green Beans

Ingredients

  • 2 lb boneless pork chops, cubed
  • 1 Tbsp Cajun seasoning
  • 2 Tbsp olive oil
  • ¼ cup butter
  • ½ cup chicken broth
  • 3 Tbsp lemon juice
  • 1 tsp garlic powder

Instructions

  1. Toss pork with Cajun seasoning. Cook pork in hot oil in a large cast iron skillet over medium-high heat until browned on all sides. Remove from skillet.
  2. Melt butter in skillet, scraping up browned bits. Add broth, lemon juice, and garlic powder; cook 3 minutes. Return pork to skillet, and cook 2 minutes.



Side Dish Ingredients

  • 1 cup shredded Parmesan cheese
  • 2 (24-oz) pkg refrigerated mashed potatoes
  • 2 (12-oz) pkg green beans
  • 2 Tbsp olive oil
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together green beans and oil on a large rimmed baking sheet; arrange in a single layer and bake 15 minutes or until tender. Season with salt and pepper, if desired.
  2. Heat potatoes according to package directions. Stir in cheese and pepper until blended.
