Pork Chop Bites
Parmesan-Pepper Mashed Potatoes and Roasted Green Beans
Ingredients
- 2 lb boneless pork chops, cubed
- 1 Tbsp Cajun seasoning
- 2 Tbsp olive oil
- ¼ cup butter
- ½ cup chicken broth
- 3 Tbsp lemon juice
- 1 tsp garlic powder
Instructions
- Toss pork with Cajun seasoning. Cook pork in hot oil in a large cast iron skillet over medium-high heat until browned on all sides. Remove from skillet.
- Melt butter in skillet, scraping up browned bits. Add broth, lemon juice, and garlic powder; cook 3 minutes. Return pork to skillet, and cook 2 minutes.
Side Dish Ingredients
- 1 cup shredded Parmesan cheese
- 2 (24-oz) pkg refrigerated mashed potatoes
- 2 (12-oz) pkg green beans
- 2 Tbsp olive oil
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together green beans and oil on a large rimmed baking sheet; arrange in a single layer and bake 15 minutes or until tender. Season with salt and pepper, if desired.
- Heat potatoes according to package directions. Stir in cheese and pepper until blended.
