Ingredients

  • 1½ lb lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1 (14.5-oz) can organic diced tomatoes with green chiles
  • 1 (8-oz) can organic tomato sauce
  • 1 (14.5-oz) can less sodium beef broth
  • 1 cup water
  • ½ tsp salt
  • ½ (16-oz) pkg whole grain elbow macaroni
  • 1 (8-oz) block Cheddar cheese, shredded
  • ½ cup chopped fresh cilantro
  • 2 green onions, chopped

Instructions

  1. Cook beef, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in chili powder, tomatoes, tomato sauce, broth, water, and salt. Bring to a boil; add macaroni.
  3. Cook 10 minutes or until macaroni is tender, stirring occasionally. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with cilantro and onions.

  • 2 (10-oz) pkg chopped romaine lettuce
  • 3 organic Roma tomatoes, chopped
  • 2 carrots, shredded
  • ½ cup organic avocado Ranch dressing

Side Dish Instructions

  1. Combine lettuce, tomatoes, and carrots in a large bowl; drizzle with dressing, and toss.
