One-Pot Taco Chili Mac

Ingredients
- 1½ lb lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 Tbsp chili powder
- 1 (14.5-oz) can organic diced tomatoes with green chiles
- 1 (8-oz) can organic tomato sauce
- 1 (14.5-oz) can less sodium beef broth
- 1 cup water
- ½ tsp salt
- ½ (16-oz) pkg whole grain elbow macaroni
- 1 (8-oz) block Cheddar cheese, shredded
- ½ cup chopped fresh cilantro
- 2 green onions, chopped
Instructions
- Cook beef, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Stir in chili powder, tomatoes, tomato sauce, broth, water, and salt. Bring to a boil; add macaroni.
- Cook 10 minutes or until macaroni is tender, stirring occasionally. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with cilantro and onions.

- 2 (10-oz) pkg chopped romaine lettuce
- 3 organic Roma tomatoes, chopped
- 2 carrots, shredded
- ½ cup organic avocado Ranch dressing
Side Dish Instructions
- Combine lettuce, tomatoes, and carrots in a large bowl; drizzle with dressing, and toss.
