Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into bite size pieces
  • ½ (15-oz) pkg frozen mixed vegetables
  • ¼ tsp pepper
  • 1 (10.5-oz) can cream of chicken soup
  • 2 Tbsp milk
  • ½ (6-oz) pkg savory herb stuffing mix
  • ½ cup less sodium chicken broth

Instructions

  1. Preheat oven to 350°F. Combine chicken and vegetables in a lightly greased 9-inch baking dish. Sprinkle with pepper.
  2. Stir together soup and milk; pour over chicken mixture. Sprinkle with stuffing mix. Drizzle broth over stuffing mix.
  3. Cover and bake 25 to 30 minutes. Uncover and bake 15 to 25 minutes longer or until stuffing is browned and chicken is done.



Side Dish Ingredients

  • 1 cup halved grape tomatoes
  • 2 Tbsp lemon vinaigrette
  • ½ head green leaf lettuce, chopped
  • 2 Tbsp grated Parmesan cheese

Side Dish Instructions

  1. Toss together all ingredients in a bowl just before serving.
