Smashed Chive and Butter Potatoes
Ingredients
- 3 lb small red potatoes
- 4 cloves garlic
- ½ cup butter, softened
- ½ (8-oz) block cream cheese, softened
- 3 Tbsp minced fresh chives
Instructions
- Combine potatoes, garlic cloves, and water to cover in a large Dutch oven. Bring to a boil over medium-high heat; reduce heat, and simmer 20 minutes or until potatoes are tender. Drain and return to pot.
- Add butter, cream cheese, and chives. Mash with a potato masher to desired consistency. Season with salt and pepper, if desired.
