Moroccan Chickpea Couscous

Ingredients

  • 1 (10-oz) pkg whole wheat couscous
  • 1 (15-oz) can no salt added chickpeas, rinsed and drained
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp olive oil
  • ½ Tbsp ground cumin
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 clove garlic, minced

Instructions

  1. Cook couscous according to package directions; stir in chickpeas and cilantro.
  2. Add lemon juice, oil, cumin, paprika, cayenne pepper, salt, pepper, and garlic; toss. Let stand 10 to 15 minutes before serving.

  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 3 Tbsp organic raisins
  • 2 tsp honey
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp olive oil mayonnaise
  • 1 large carrot, shredded

Side Dish Instructions

  1. Combine carrot, raisins, mayonnaise, vinegar, honey, salt, and pepper in a bowl; stir until blended. Refrigerate 1 hour before serving.
