Moroccan Chickpea Couscous

Ingredients
- 1 (10-oz) pkg whole wheat couscous
- 1 (15-oz) can no salt added chickpeas, rinsed and drained
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp fresh lemon juice
- 2 Tbsp olive oil
- ½ Tbsp ground cumin
- ½ tsp paprika
- ¼ tsp cayenne pepper
- ¼ tsp salt
- ⅛ tsp pepper
- 1 clove garlic, minced
Instructions
- Cook couscous according to package directions; stir in chickpeas and cilantro.
- Add lemon juice, oil, cumin, paprika, cayenne pepper, salt, pepper, and garlic; toss. Let stand 10 to 15 minutes before serving.

- ⅛ tsp salt
- ⅛ tsp pepper
- 3 Tbsp organic raisins
- 2 tsp honey
- 2 Tbsp apple cider vinegar
- 2 Tbsp olive oil mayonnaise
- 1 large carrot, shredded
Side Dish Instructions
- Combine carrot, raisins, mayonnaise, vinegar, honey, salt, and pepper in a bowl; stir until blended. Refrigerate 1 hour before serving.
