Macadamia-Crusted Mahi Mahi

Mango-Coconut Rice and Snow Peas

Ingredients

  • 1 lime
  • ¼ cup finely chopped macadamia nuts
  • ⅓ cup panko breadcrumbs (preferably whole wheat)
  • 1 Tbsp butter, melted
  • ½ Tbsp minced ginger
  • 2 (6-oz) mahi mahi fillets
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 425°F; place a rimmed baking sheet in oven while preheating.
  2. Grate zest and squeeze juice from lime. Stir together nuts and panko in a shallow dish. Stir together butter, lime zest, juice, and ginger in a second shallow dish.
  3. Sprinkle fish with salt and pepper; dip in butter mixture. Dredge fish in nut mixture, pressing to coat. Carefully place fish on lightly greased preheated baking sheet.
  4. Bake 8 to 10 minutes or until fish flakes with a fork.



Side Dish Ingredients

  • ¼ tsp pepper
  • 1 (8.5-oz) pouch microwavable brown basmati rice
  • ¼ tsp salt
  • ½ cup frozen mango chunks, thawed and chopped
  • ½ tsp minced ginger
  • 1 (6-oz) pkg microwavable snow peas
  • ¼ cup unsweetened flaked coconut, toasted

Side Dish Instructions

  1. Cook rice according to package directions; fluff with a fork, and stir in ginger, coconut, and mango.
  2. Meanwhile, microwave snow peas according to package directions; toss with salt and pepper.
