Ingredients

  • 1½ lb top sirloin steak
  • 5 Tbsp olive oil, divided
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 1 tsp ground cumin
  • 2 cloves garlic
  • 1½ cups chopped fresh cilantro
  • 3 Tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

  1. Rub sirloin with 1 Tbsp oil; sprinkle with ½ tsp each salt and pepper.
  2. Heat a grill pan or large nonstick skillet over medium-high heat; cook steak 7 to 8 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing.
  3. Meanwhile, pulse ¼ cup oil, ½ tsp each salt and pepper, cumin, garlic, cilantro, lemon juice, and lemon zest in a blender or food processor until smooth. Serve sauce over steak.

  • 1½ lb organic new potatoes, cut into wedges
  • 3 Tbsp olive oil, divided
  • 1 Tbsp paprika
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1½ lb green beans, trimmed

Side Dish Instructions

  1. Preheat oven to 425°F. Combine potatoes, 2 Tbsp oil, paprika, and ¼ tsp each salt and pepper on a rimmed baking sheet coated with cooking spray.
  2. Bake 20 to 25 minutes or until potatoes are browned and tender, turning once.
  3. Meanwhile, steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
  4. Toss beans with 1 Tbsp oil and ¼ tsp each salt and pepper.
