Top Sirloin with Cilantro Sauce
Paprika Potatoes and Steamed Green Beans

Ingredients
- 1½ lb top sirloin steak
- 5 Tbsp olive oil, divided
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 1 tsp ground cumin
- 2 cloves garlic
- 1½ cups chopped fresh cilantro
- 3 Tbsp fresh lemon juice
- 1 tsp lemon zest
Instructions
- Rub sirloin with 1 Tbsp oil; sprinkle with ½ tsp each salt and pepper.
- Heat a grill pan or large nonstick skillet over medium-high heat; cook steak 7 to 8 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing.
- Meanwhile, pulse ¼ cup oil, ½ tsp each salt and pepper, cumin, garlic, cilantro, lemon juice, and lemon zest in a blender or food processor until smooth. Serve sauce over steak.
Side Dish Ingredients
- 1½ lb organic new potatoes, cut into wedges
- 3 Tbsp olive oil, divided
- 1 Tbsp paprika
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1½ lb green beans, trimmed
Side Dish Instructions
- Preheat oven to 425°F. Combine potatoes, 2 Tbsp oil, paprika, and ¼ tsp each salt and pepper on a rimmed baking sheet coated with cooking spray.
- Bake 20 to 25 minutes or until potatoes are browned and tender, turning once.
- Meanwhile, steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
- Toss beans with 1 Tbsp oil and ¼ tsp each salt and pepper.
