Spinach-Tomato Couscous

Ingredients
- 2 cups pearled couscous
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (10-oz) pkg spinach
- 1 pint grape tomatoes, halved
- ⅓ cup refrigerated lemon vinaigrette
- 1 Tbsp lemon zest
Instructions
- Prepare couscous according to package directions.
- Meanwhile, cook garlic in hot oil in a large skillet over medium heat 1 minute. Gradually add spinach, stirring until just wilted. Transfer to a large bowl.
- Add couscous, tomatoes, lemon vinaigrette, and zest; toss. Season with salt and pepper, if desired.
