Ingredients

  • 2 cups pearled couscous
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg spinach
  • 1 pint grape tomatoes, halved
  • ⅓ cup refrigerated lemon vinaigrette
  • 1 Tbsp lemon zest

Instructions

  1. Prepare couscous according to package directions.
  2. Meanwhile, cook garlic in hot oil in a large skillet over medium heat 1 minute. Gradually add spinach, stirring until just wilted. Transfer to a large bowl.
  3. Add couscous, tomatoes, lemon vinaigrette, and zest; toss. Season with salt and pepper, if desired.
