Grouper with Tomato-Red Pepper Sauce

Ingredients

  • ¼ cup fresh basil leaves
  • 2 Tbsp sliced almonds
  • 2 Tbsp minced garlic
  • 1½ Tbsp olive oil, divided
  • 1 Roma tomato, coarsely chopped
  • ¼ cup chopped roasted red peppers
  • ¾ lb grouper fillets
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Pulse basil, nuts, garlic, and 1 Tbsp oil in a food processor until finely chopped. Add tomato and red peppers; pulse until smooth.
  2. Sprinkle fish with salt and pepper. Cook in ½ Tbsp hot oil in a skillet over medium-high heat 3 minutes; reduce heat to medium, and turn fish.
  3. Pour sauce around fish; cook 5 minutes or until fish flakes with a fork. Serve fish with sauce.

  • ½ (24-oz) container refrigerated mashed potatoes
  • ½ (5-oz) pkg spinach

Side Dish Instructions

  1. Heat potatoes according to package directions. Stir in spinach until wilted.
