Crispy Oven-Roasted Potatoes with Spicy Ketchup

Ingredients

  • 4 large potatoes, cut into ¼-inch slices
  • 2 Tbsp olive oil
  • 2 tsp salt
  • 1¼ tsp pepper, divided
  • 1 cup ketchup
  • 3 chipotle chile peppers in adobo sauce, minced

Instructions

  1. Preheat oven to 450°F.
  2. Toss together potatoes, oil, salt, and 1 tsp pepper, and arrange in a single layer on greased rimmed baking sheets.
  3. Bake 30 to 40 minutes or until potatoes are golden and tender.
  4. Meanwhile, stir together ketchup, chile peppers, and remaining ¼ tsp pepper in a bowl.
  5. Serve potatoes with spiced ketchup.
