Ingredients

  • 12 tomatillos, husks removed
  • 3 jalapeño peppers, seeded and minced
  • 1 cup loosely packed fresh cilantro leaves
  • 1 cup chopped sweet onion
  • 2 Tbsp lime juice
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Combine tomatillos and water to cover in a medium saucepan; bring to a boil over medium-high heat. Reduce heat, and simmer 10 minutes or until tender. Drain well.
  2. Process tomatillos, jalapeños, and cilantro in a food processor or blender until chunky.
  3. Add onion, lime juice, salt, and pepper; pulse until combined. Store, covered, in refrigerator up to 1 week.
