Skillet Mexican Corn

Ingredients
- 3 Tbsp butter
- 1 small red bell pepper, chopped
- ½ cup chopped red onion
- 2 (16-oz) pkg frozen whole kernel corn, thawed
- 1 tsp ground cumin
- ½ tsp ground chipotle chile pepper
- ¼ tsp ground coriander
- ½ tsp salt
- ½ tsp pepper
Instructions
- Melt butter in a saucepan over medium-high heat. Add bell pepper and onion; cook, stirring often, 5 to 6 minutes or until tender.
- Stir in corn, cumin, chipotle chile pepper, coriander, salt, and pepper. Cook 8 to 10 minutes, stirring often, until corn is thoroughly heated.
