Ingredients

  • 3 Tbsp butter
  • 1 small red bell pepper, chopped
  • ½ cup chopped red onion
  • 2 (16-oz) pkg frozen whole kernel corn, thawed
  • 1 tsp ground cumin
  • ½ tsp ground chipotle chile pepper
  • ¼ tsp ground coriander 
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Melt butter in a saucepan over medium-high heat. Add bell pepper and onion; cook, stirring often, 5 to 6 minutes or until tender.
  2. Stir in corn, cumin, chipotle chile pepper, coriander, salt, and pepper. Cook 8 to 10 minutes, stirring often, until corn is thoroughly heated.
