Ingredients

  • Filling:
  • 1 cup sugar
  • 2 Tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 3 (20-oz) pkg frozen sliced peaches, thawed and drained
  • 2 Tbsp lemon juice
  • 1 tsp vanilla extract
  • Topping:
  • 1⅔ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup butter, softened
  • ⅓ cup sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • ¾ cup buttermilk

Instructions

  1. Preheat oven to 375°F.
  2. For Filling: Stir together 1 cup sugar, 2 Tbsp flour, cinnamon, and salt in a large bowl. Add peaches, lemon juice, and vanilla; toss. Spoon into a lightly greased 13- x 9-inch baking dish.
  3. For Topping: Stir together 1⅔ cups flour, baking powder, baking soda, and salt in a small bowl.
  4. Beat butter, ⅓ cup sugar, and vanilla in a large bowl with a mixer at medium speed until fluffy. Add eggs, 1 at a time, beating well after each addition.
  5. Add flour mixture alternately with buttermilk, beginning and ending with flour mixture, beating until just combined after each addition.
  6. Dollop over peach mixture in dish. Bake 55 to 60 minutes or until topping is golden brown.
