Grandma's Peach Cobbler

Ingredients
- Filling:
- 1 cup sugar
- 2 Tbsp all-purpose flour
- 1 tsp ground cinnamon
- ½ tsp salt
- 3 (20-oz) pkg frozen sliced peaches, thawed and drained
- 2 Tbsp lemon juice
- 1 tsp vanilla extract
- Topping:
- 1⅔ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup butter, softened
- ⅓ cup sugar
- 2 tsp vanilla extract
- 2 large eggs
- ¾ cup buttermilk
Instructions
- Preheat oven to 375°F.
- For Filling: Stir together 1 cup sugar, 2 Tbsp flour, cinnamon, and salt in a large bowl. Add peaches, lemon juice, and vanilla; toss. Spoon into a lightly greased 13- x 9-inch baking dish.
- For Topping: Stir together 1⅔ cups flour, baking powder, baking soda, and salt in a small bowl.
- Beat butter, ⅓ cup sugar, and vanilla in a large bowl with a mixer at medium speed until fluffy. Add eggs, 1 at a time, beating well after each addition.
- Add flour mixture alternately with buttermilk, beginning and ending with flour mixture, beating until just combined after each addition.
- Dollop over peach mixture in dish. Bake 55 to 60 minutes or until topping is golden brown.
