Lasagna Cheese Soup

Ingredients
- 2 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 (32-oz) cartons chicken broth
- 2 (14.5-oz) cans diced tomatoes
- 1 (15-oz) can tomato sauce
- 2 Tbsp tomato paste
- 1 Tbsp brown sugar
- 1 Tbsp dried Italian seasoning
- ½ tsp salt
- 2 cups uncooked lasagna noodles, broken into 1-inch pieces
- 1 (15-oz) container ricotta cheese
- 1 (1-oz) pkg fresh basil, chopped
- ¼ tsp pepper
Instructions
- Cook ground beef, onion, and garlic in a large soup pot 8 to 10 minutes or until beef is browned and crumbly; drain.
- Stir in broth, tomatoes, tomato sauce, tomato paste, brown sugar, Italian seasoning, and salt.
- Bring to a boil; reduce heat and simmer 15 minutes.
- Add noodles, and simmer 10 minutes or until pasta is tender.
- Stir together ricotta, basil, and pepper in a small bowl. Dollop servings with cheese mixture.
