Ingredients
- ½ cup plus 6 Tbsp butter, softened and divided
- 1 cup sugar
- 1 cup firmly packed brown sugar, divided
- 2 large eggs
- 1 cup pure pumpkin
- 3¼ cups all-purpose flour, divided
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- ½ cup milk
- ¼ cup maple syrup
- 1 cup chopped walnuts
Instructions
- Preheat oven to 350°F; coat a 13-x 9-inch baking dish with baking spray with flour.
- Beat ½ cup butter, 1 cup sugar, and ¼ cup brown sugar at medium speed with a mixer until fluffy. Add eggs, one at a time, beating just until combined after each addition. Stir in pumpkin.
- Stir together 2½ cups flour, baking soda, baking powder, salt, and cinnamon in a bowl. Gradually add to butter mixture, alternately with milk, beginning and ending with flour mixture, beating just until blended after each addition.
- Stir in syrup. Spoon mixture into prepared pan.
- Stir together remaining ¾ cup brown sugar and ¾ cup flour in a bowl. Cut in 6 Tbsp butter with a pastry blender or a fork until mixture is crumbly; stir in walnuts.
- Sprinkle mixture over batter in pan, and bake 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Let cool 30 minutes before cutting.
