Iced Sugar Cookies

Ingredients

  • 1 cup butter, softened
  • 1¼ cups sugar
  • 1 Tbsp vanilla extract
  • 2 large eggs
  • 3¼ cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Meringue Powder Icing (recipe follows)
  • Assorted sprinkles and sanding sugars

Instructions

  1. Beat butter, sugar and vanilla in a large bowl at medium speed with a mixer until fluffy.
  2. Add eggs, 1 at a time, beating well after each addition.
  3. Stir together flour, salt, baking powder, and baking soda in another bowl. Gradually add to butter mixture, beating until blended.
  4. Shape dough into 2 discs; wrap in plastic wrap, and refrigerate at least 2 hours or up to 3 days.
  5. Preheat oven to 350°F; line baking sheets with parchment paper.
  6. Roll out dough to ¼-inch-thickness on a lightly floured surface.
  7. Cut dough with desired cutters, and place on prepared pans.
  8. Bake 10 to 12 minutes or until edges are lightly browned; cool on pans 2 minutes. Reroll and bake any remaining dough, if desired.
  9. Remove from pans, and cool completely on wire racks.
  10. Decorate cookies as desired with Meringue Powder Icing, and sprinkles.
  11. Let icing dry completely before storing in airtight containers.
