Pistachio Sand Tarts

Ingredients
- 1 cup butter, softened
- ¾ cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup roasted and salted pistachio nuts, finely ground
- Powdered sugar
Instructions
- Preheat oven to 325°F; line baking sheets with parchment paper.
- Beat butter, powdered sugar, and vanilla in a large bowl with a mixer at medium speed until mixture is creamy.
- Gradually beat in flour and pistachios, beating until combined.
- Shape dough into 1-inch balls; place 2 inches apart on prepared pans.
- Bake 12 to 15 minutes or until edges are lightly browned; let cool completely in pans.
- Remove from pans, and roll in powdered sugar.
