Ingredients

  • 1 cup butter, softened
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup roasted and salted pistachio nuts, finely ground
  • Powdered sugar

Instructions

  1. Preheat oven to 325°F; line baking sheets with parchment paper.
  2. Beat butter, powdered sugar, and vanilla in a large bowl with a mixer at medium speed until mixture is creamy.
  3. Gradually beat in flour and pistachios, beating until combined.
  4. Shape dough into 1-inch balls; place 2 inches apart on prepared pans.
  5. Bake 12 to 15 minutes or until edges are lightly browned; let cool completely in pans.
  6. Remove from pans, and roll in powdered sugar.
