Ingredients

  • 2 (2-inch-thick) beef tenderloin steaks
  • ½ cup butter
  • 1 shallot, quartered
  • 3 cloves garlic
  • 5 sprigs fresh thyme

Instructions

  1. Lightly season steaks with kosher salt and pepper; let stand at room temperature 30 minutes.
  2. Preheat oven to 425°F. Melt butter in a large cast-iron skillet over medium heat. Add shallot, garlic cloves, and thyme; cook 5 minutes or until butter is browned. Remove shallot, garlic, and thyme from skillet.
  3. Add steaks; cook over medium-high heat undisturbed 5 minutes. Turn steaks.
  4. Return shallot, garlic and thyme to skillet; place skillet in oven, and bake 5 to 10 minutes or to desired doneness.
  5. Spoon butter mixture over steaks; let stand 5 minutes before serving.
